One of my favorite things about Saturdays is having time to prepare healthy and delicious meals. There is just something great about being able to really think about what I want to eat and then celebrate the decision of eating something both tasty and healthy. Please don't get me wrong. The meals I eat each day are special and deliciously made by my loving wife (who is a far better cook than I am). I am not complaining at all about those meals. I just think it's fun to actually have time to enjoy the meals over the weekend, instead of scarfing them down on the way out the door each morning or at my desk at lunch.
I started out my day with another delicious spinach and cheese omelet. I'm sure at some point I will start adding in more vegetables, but for now I am really enjoying my simple omelet (interesting fact - the autocorrect on my iPhone spells it omelette instead of the american style omelet). For lunch I had a salad with deli meat and raspberry vinaigrette. If you haven't tried gold fish crackers on a salad, you really should. They are lower in calories than croutons, but add a great salty flavor to the mix. I really thought after nailing it for both breakfast and lunch that I would be able to cap it off with a perfect grilled dinner (since it was seventy-plus degrees today!). Sadly, the afternoon got away, and I didn't have time to get to the grocery store. So my dinner plans were changed, and I made myself a peanut butter and jelly sandwich. That's the way life goes sometimes. Things happen and cause our plans to be adjusted. We can whine and complain when we don't get our way, or we can make the best of it. The fact is that sometimes you just have to be quiet and enjoy a good old PB&J. So tonight you'll find me going with the flow as I'm losing my butter half.
My calories were great today, but I do feel like I had too many of my calories as snack foods. I really like weekends because I'm able to get my workout in during the daytime.
