Six years ago Bekah and I spent our first Valentine's Day as a married couple on Amelia Island in Florida. Since then we have had great Valentine's Days, but that one is still my favorite. Tonight is one of my all-time favorites now, and it was surprisingly simple. Having two kids (and having just had a date night two Fridays ago) we decided that, since Valentine's Day is on a weekday this year, we would just stay home. Since our kids don't always go down easy (and because UK was playing tonight) we decided to do something simple for dinner. It's been unnecessarily warm, and the forecast said the temperature would drop today. So we went ahead and planned on having tomato soup and fancy (for us) grilled cheese sandwiches. As it turns out, Bekah and E had colds, so soup was the perfect choice for our dinner. Bekah made grilled cheese with French Bread and Monterey Jack cheese. If you haven't had a grilled Monterey jack cheese sandwich, you have to try it! It was just the right amount of gooey cheesiness.
The biggest challenge for Valentine's Day for all of us trying to get healthy is the sweets. Now I'm not a huge sweets person, but when it comes to chocolate-dipped strawberries I am. Bekah made some of the best dipped strawberries I've ever had. So how did I enjoy a delicious meal and desert? I planned ahead. With myfitnesspal I am able to put in my calories the night before and plan ahead. It makes eating healthy through the holiday so much easier, and gives me confidence that I can do it while staying within my calorie goal. It's a fun day to celebrate our love for the most special people in our lives. I am always reminded that I am able to love deeply because of the love God has for me. So today, I am challenged to love (which is a verb. It's an action, not a feeling) my wife deeply from my heart. I'm celebrating Valentine's Day, and I'm losing my butter half.
