I can't believe that I forgot to grab a quick picture of what we grilled tonight for dinner. So I dug up a picture when I made the same pork a while back. Walmart has thick cut boneless pork chops that Bekah and I have been buying for years now. It's a very simple recipe (pork, salt, pepper, butter). I leave it over high heat, and then move it to indirect heat for the remainder of the time. It is the best pork I've ever eaten. Bekah joined me at the grill by adding some eggplant slices. I don't think I had ever tried eggplant, and eating it seasoned and grilled was better than I thought it would be. B wasn't quite sure what he thought about it, and E wasn't willing to even try it. Bekah really enjoyed it. I ate a few pieces, and then had some roasted zucchini to finish off my meal.
Tomorrow is another weigh in, and as I've said many many times on Wednesday nights, I'm a little nervous about tomorrow morning. First, I ate too much pork this evening, and I ate too many red hots at work this afternoon. After being sick last week, I know I was down right away from that, so I hope I haven't put on weight from starting to eat again. I am hoping to be down at least two and a half pounds. I guess I will see first thing in the morning. No matter what the scale says, I am still losing my butter half!
My calorie intake today was good. As I mentioned above, I ate a little too much pork at dinner, and I definitely didn't need red hots this afternoon. My workout this morning was really good. I am daily seeing myself get stronger and the workouts getting better.
