It's Friday folks! The day that gives hope that relaxation and rest are just a few hours away. Thankfully, today brought sunny weather, which meant that I could finally get back out on the grill. I have a pretty simple recipe for boneless pork chops. I buy the thick cut, bonesless pork chops from Walmart. I put the chops on the grill over high heat. I use about a quarter of a stick of butter and continuously rub the pork with butter each time I flip. I also grind fresh pepper and sea salt on each side after butter. I grill each side on high heat for four to five minutes. Then I pull the chops to the opposite side of the grill on low to medium heat. I leave them there for another five to ten minutes rotating and flipping them every minute or two. I check the temperature with a digital thermometer until I am sure it is at one hundred and forty-five to one hundred and fifty degrees. Then I pull it off the grill and let it rest (while covered in aluminum foil) for four minutes. The result is an amazingly juicy and tender (and inexpensive) piece of meat. I like this with grilled zucchini and another vegetable (tonight was grilled corn). This has been one of my favorites as I've been losing my butter half!
My calories today were not my best, but not terrible either. I had a few wings and fries with my lunch and then some of a bundtlet from Nothing Bundt Cakes. If you haven't tried Nothing Bundt Cakes, you have to. They are amazing! My workout today didn't happen. I needed sleep and rest, but I'm going to put in a little overtime tomorrow. I'm grateful to not be sick anymore. It's time to focus and work my tail off these last two weeks.
Grilled Pork Chop Ingredients (Feeds two to three people)
- 2 - Thick Cut, Boneless Pork Chops (from Walmart)
- 1/4 stick - Salted Butter
- Pepper (grind over each side to taste while on grill)
- Sea Salt (grind over each side to taste while on grill)
